Gotta go with RCS. Setting up CVS just irritates me, and I seem to have problems merging updates more often than not. RCS being simpler and allowing only one person to work on a file at once works better for the way I like to do things. I'll also put in a good word for rsnapshot. While not strictly a revision control system, it works really nicely.
