I have long noticed that my consumption of coffee in particular depends on the strength of the brew. I have fewer cups if it is strongly brewed coffee and I have lots more when it is weak stuff.
Another oddity in my pattern is a tendancy to switch to caffeinated soda (Diet Pepsi, Diet Mountain Dew, etc.) in the afternoon and there I lose track of how many I have.
