Using xsh, a wrapper around XML::LibXML:

open file.xml ;
for //text() {
    if xsh:matches(., '\S')
        echo concat(name(..), ':') (.) ;
}

Outputs:

ItemId:  987
ItemName: Coupler
Quantity: 5
