Vertical tab is octal char 013 in ASCII, so if you have correctly slurped your data into $fmt_edi (which I don't think you have) the following should work.
$fmt_edi =~ s/\013/\n/g;

[stevieb]: beech already found a thing I don't like... it'll take time to sort out some new methods to deal with little/big endian ;)
[stevieb]: yeah, going to have to make some changes when reading a 'word'. I digress, for now
[stevieb]: everything depends on how the I2C hardware at the other end returns. Instead of forcing a user to bitshift, I think I'll add methods for read_word_big() and read_word_little() or something
