Use gnuplot. It can output plots as postscript.

I second the use of gnuplot. I used it quite a bit in some coursework. It can be a little tricky to start out with, but there are plenty of sources to help you learn how to use it. One thing I particularly like about it is that it's command-line driven, so you can play with the parameters and see the results. One thing I particularly like about it is that it's command-line driven, so you can play with the parameters and see the results. Then, when you get it *just* the way you like it before starting any coding.
